Fold Over Omelet for Breakfast

When waking up in the morning, it's important to have a hearty and healthy breakfast. In order to get this recipe done right, we are going to need the following ingredients.
- 2 eggs lightly beaten
- 2 pieces of lox (optional)
- 1 slice of onion
- 1 large mushroom sliced
- 1 mini pepper diced (red, orange or yellow) (optional)
- Pam
Coat a small fry pan with Pam, and place the onions, mushrooms and peppers in the pan. Stir until lightly browned and then remove from the pan.
Coat the pan again with Pam for the egg mixture. Make sure that the egg covers the bottom of the pan. When one side is browned turn over very carefully.

Place the onions, mushrooms and peppers on one side of the omelet, topping it with the lox (optional). Fold one half of the omelet over to make an envelope. Serve with a roll, toast or a bagel – salt and pepper to taste. Any cheese is optional. A salad would be a plus to this delicious breakfast.
