Summer Recipes: Pizza Tortillas

Bring together amazing flavors with a golden crisp and homemade sauce.

Fresh, homemade sauce brings lots of life and flavor to this Mexican and Italian cuisine inspired .

Chances are, if you asked a dozen different people how to make tomato sauce, each one would have a different answer. In fact, I don't make tomato sauce the same every time either. It's a great food to experiment with since there's so many possibilities. If you're really pressed for time, pick up some of the ready-made kind. However, if not, give this recipe a try:

Sauce Ingredients

-12 oz. of tomato paste

-16 oz. of crushed tomatoes

-Parmesan cheese

-Oregano

-Coriander

-Thyme

-Lemon juice

-Two cloves of garlic

-1/4 of an onion

-Olive oil

Sauce Directions

Pour the tomato paste and the crushed tomatoes into a medium sized pot over low heat. Add in approximately 1/4 of a cup of olive oil and lemon juice each. Stir the mixture together to distribute the density a bit.

Chop up 1/4 of an onion and the two cloves of garlic and add them into the pot as well. Sprinkle in half a handful of thyme and one tablespoon or oregano. Add only one dash of coriander. It adds flavor to the sauce, but even a little bit too much entirely ruins it.

Sprinkle Parmesan cheese on the top of the sauce and then stir it all together. Put a lid on top of it and let it simmer on low heat for approximately two hours stirring occasionally.

Tortilla Ingredients

-Homemade sauce

-Four flour tortillas

-Oregano

-Italian seasoning

-Olive oil

-7 oz. bag of fat-free shredded mozzarella

Pizza Tortilla Directions

When the sauce has simmered for about two hours, preheat the oven to 350 degrees. Take out a baking sheet and grease it.

Combine olive oil, Italian seasoning and oregano into a small bowl. Brush the inside of each of the flour tortillas with this mixture. Carefully spoon about 1/4th of the pot of sauce onto each of the flour tortillas and top each one with 1/4 the bag of cheese.

Close each of the tortillas and brush the top with the olive oil, Italian seasoning and Oregano mixture. If there's leftover sauce or cheese, pour a dollop on the top of each tortilla.

Bake for 10 to 12 minutes before enjoying this delightful dish. These are fun to eat as a meal, but they're also great for appetizers at a barbecue. Cut them up into little slices so that all of your guests can enjoy them.

Not feeling the traditional soda and pizza or beer and pizza combination? Go for something that still has fizz and crisp, but isn't quite as heavy.

Fill the bottom of a short, chubby glass with ice and pour soda almost all the way up to the top. Add one ounce of triple sec and enjoy this refreshing beverage.
