Summer Recipes: Pizza Toast with Chunky Sauce
Here's a recipe that's delicious for lunch, dinner or a snack.
When nasty, chilly weather "rains" supreme, you may find yourself craving an easy meal that warms you up.
Ingredients

-28 oz. of crushed tomatoes
-8 oz. of shredded mozzarella
-Olive oil
-Italian seasoning
-Oregano
-Pepper
This recipe serves two.
Directions
A few hours before you want to eat this pizza toast, start preparing your sauce. To make a nice, chunky sauce, combine the tomato paste and crushed tomatoes with the three cloves of chopped up garlic. Add in a little bit of olive oil and stir everything together.
Making sauce is really a very personal endeavor, since different people have various recipes that they prefer. We added in several dashes of Italian seasoning, oregano and pepper to this particular sauce, but you could play around with different spices such as coriander, salt and parsley to make a taste you really love. While we wouldn't recommend either of these ingredients for a really chunky sauce, try adding in some red wine or a touch of milk for another recipe.
Let the sauce simmer on low heat for about three and a half hours. Mix olive oil and the seasonings that you used in the sauce in a small bowl. Paint each of the pieces of bread with this mixture until it has a shine and spices spread throughout the bread. Pour a ladle-full of sauce onto each piece of the bread, and then toss mozzarella cheese on top. Add a few extra sprinkles of spices to the top of the cheese for bursts of flavor.
Bake in the oven at 350 degrees for about 10 to 12 minutes, and serve up the pizza toast with a refreshing glass of Mellow Max Chardonnay.
