Summer Recipes: Grown-Up Chicken 'n' Ketchup

Try this recipe for a fun finger food for adults.

Recall backyard barbecues and road trip dinners spent dunking chicken fingers into tons of ketchup with this more grown-up version of the meal.

Ingredients

10 chicken drumsticks

Minced onion

1/4 of an onion

3 gloves of garlic

8-10 ounces of ketchup

olive oil

This meal serves 2-3 people.

 

Directions

After defrosting and washing the chicken drumsticks, sprinkle approximately one-half tablespoon of salt and one tablespoon of pepper over them. Coat a baking pan or tray with olive oil and place the drumsticks in the pan.

Cut up one-fourth of an onion into small slices and mince three gloves of garlic. Don't panic if the garlic takes on a green shade after cooking. Due to the acidity in ketchup, the garlic can change color. Add the garlic and onions to the chicken on the pan. Shake one tablespoon of minced onion to the top of the mixture.

Place the drumsticks in the oven at 350 degrees for approximately 30 minutes.

After the 30 minutes has passed, take the tray out of the oven. Mix eight to 10 ounces of ketchup in a small bowl with one-half tablespoon of pepper, and paint the drumsticks with this mixture. Turn the drumsticks onto the other side with tongs before you put them back in the oven.

Let them bake for approximately 20 more minutes in the oven.

Once they're out of the oven, they're ready to serve. Opt for some French fries or go for a healthier option that we love – boiled corn with margarine. After shucking the corn, simply place it in boiling water for about 10 minutes.

Of course, dipping is always fun so squirt some extra ketchup on your plate for that purpose.

Since this meal is reminiscent of childhood, serve it with drinks that stay with that vibe.

Fill a glass up about three-fourths of the way with ice. Put a scoop of chocolate ice cream on the top of the glass. For an even better taste (and if you're willing to use a spoon!) cut up a chocolate ice cream sandwich into pieces and put that on the top of the mixture.

Fill the glass half-way up with your favorite black cherry soda, add one-fourth of a glass of skim milk and then top it off with more black cherry soda for some fizz.
